Is there a way to set up sub projects under a main project in Jira?

Question

For example if I have Project A, then under that project I want DevOps, Platform....

Any suggestions?

use component/lead as sub-project then. an out-of-box solution. you also can have different issue type/ workflow for different "sub-project".

but I would suggest, when it gets complex, use multiple Jira projects then.
