Could you please advise how many time it will be needed for update of all SLAs, if I remove the field "priority" from my project and add fields "severity"/"urgency" with ne settings for them.
Currently there are more then 58 000 tickets in the project.

That is hard to tell, but I would not expect the update to take more than 15 minutes. Normally, the update will only update the SLA timers on open tickets - closed tickets have their SLA from the past and won't be updated. So that should limit the time for updating.
Also, this update is running behind the scenes, so your users can continue working while the update takes place - should that be one of your concerns.
