I can't seem to find a way to do this - but how do I 'reset' the notifications in a project to default? I tried deleting/recreating a project and that doesn't do it - so not sure if there's a global setting somewhere I'm missing.

Each project can be assigned a notification scheme. So all you need to do is give this project the 'default notification scheme'.
However if you have edited the 'default notification scheme' its going to use whatever you edited it to do.
You should always leave the 'default scheme' alone and create brand new ones to use for projects.

When using Jira, currently, it's not possible to reset the notification scheme, but I can share with you the default one of my test site and you can edit yours.
If that's not the case, please let us know more details about what notification you would like to reset. If possible, send us a screenshot.
