In order to be GDPR compliant, we would like to be able auto delete uploaded files, with a regular given frequency, from every hip chat room/1-2-1 chat. Is this possible?

It's not possible to auto delete uploaded files from HipChat. You can, however, configure the group's history retention in a way it would clear history and files/links after a certain amount of days.
