How do I change the admin of a page?

Any one know how to update the name/picture of the admin for pages on our site? The person who created these pages has changed employment.

When you say "admin of a page", do you mean the page's creator? If so, you cannot change the creator's name.

Are you on Server or Cloud?

You'll need to login as that user in order to update their details. Alternatively, you can create other admins but it won't update the primary one's details.
