Alternatives to Soy Template changes for Confluence emails?

I have been tasked with updating the soy templates for email for Confluence Data Center due to sensitive content being transmitted through the cloud by Outlook 365.  We are aware that soy template updates are not supported by Atlassian .  We are aware there is a plug-in that we could purchase (but we do not have the budget for it).  We are aware that it is a user setting that we could set for all the users.

Has anyone found any training for soy templates?  I have only found a reference page and I cannot seem to map what is in the reference page to HOW Atlassian has it implemented. 

Has anyone successfully updated the soy templates to remove the body content from the emails (and replaced it with the a comment)?

Has anyone tried the script to update the user settings in the DB? (ref: https://confluence.atlassian.com/confkb/how-to-disable-show-changed-content-to-all-users-407725054.html)   If you did implement this, did you ever experiment with locking that field so the users could not update it?  I am trying to determine if we can lock that field without breaking the entire system.
