Can anyone help? Very new to EazyBI. I have a report set to show specific approvers as part of the workflow transition. On the ticket, I can see the approvers for the specific transitions, but on the report using these same custom fields and transitions, it shows ALL the approvers for all the transitions. I can't get it to show the specific set of 3 approvers. Any ideas

You are correct. Dimension Approvers does not work with historical data representing an actor who made a specific status change.
I would suggest using a dimension Transition Author instead for this purpose. You can use dimension Transition Author with the measure Transitions to status or Transitions from status. You can use Transition when specific status change from status => to status is needed. Or Transition status dimension.
Here is a report example in our demo account with dimensions Transition Author and Assignee. In this case, is shows that sometimes a different user changes the status than the Assignee:

eazyBI, by default, does not have any indications in user dimensions (Transition Author dimension) of the user department/company.
I would suggest considering importing additional property with custom data import to mark (add some grouping for users) and build the new hierarchy you can use in your reports to select the needed group.
Here in the eazyBI community portal, we have a detailed step-by-step guide for this. The example is based on the Assignee dimension, but the same principles will work for the Transition Author dimension as well
