I am testing with a Linked Smart Checklist. First, I created a template with 10 items, and linked it to a few issues. The field Smart Checklist Progress is set to 0/10 (as expected)
After that, I removed 2 items from the template. The template gets updated in all linked issues.
Now, I would expect that the field Smart Checklist Progress in the linked issues gets updated to 0/8, but that doesn't happen. It is still at 0/10. But there are only 8 items available in the Smart Checklist, so in this case you can't "complete" the checklist anymore.
Am I doing something wrong?

Yes, I still have the problem.
We changed the Linked Template a few times now.
The current smart checklist contains at this moment 28 items:
But at the time the template was linked to this Jira issue, the smart checklist had 30 items. So Smart Checklist Progress field has 0/30 in it (which is 2 off, compared to the checklist). When we add 2 more items to linked template (to get 30 again), this field gets updated to 0/32.

I still see the problem in original issues, but I can't reproduce it anymore for newer issues. So I would say, this topic can be closed.

I just want to update you that we have found a bug with Smart Checklist View List Progress, specifically at the Project Board view (e.g Kanban Board, Card View).
You should still see the correct amount of items in your Issue View.
We are reviewing this further and we'll come back with more information about the fix.

we have similar issue in Jira Cloud:
In a simple list of issues the "SmartChecklist Progress" column is empty while the "Sub-Task" (being part of that list) has two SmartChecklist items both "Done" e.g.
