We did this with the stand alone version as well. The trial of JIRA is fully functional. The functionality is only time limited by the demo license. However, when this runs out it only means you can't add new issues. You can still read/edit/transition the existing issues.

If/when you get a proper license then you can just add that into the license section of the admin area. Looks like the application and all of your data don't change at all.

One other thing you might look to do when moving from the demo version to a fully licensed version is to move your database from the temporary HSQL one that is bundled with JIRA to something more permanent. To do this you can export all of your issues to xml, point JIRA at your new database and then re-import your issues. (Attachments need moved manually!). I have done this twice now with no problems and it is all well documented here: http://www.atlassian.com/software/jira/docs/v3.13/databases/switchingdbs.html

Hope it goes well for you. Good luck! :)

As long as you're not using JIRA Studio (hosted version), you'll be fine. Trial version is just a trial license key. When you purchase a full license, all you have to do is enter it into JIRA and all configurations (including workflows) will stay the same.
