We are investigating options to set up a Community Portal for our customers similar to the Atlassian Community space. Has anyone used any Atlassian products to do something like this as we would like to keep everything connected and in one place if possible?
Actually, Atlassian did.
This is the fourth "Community" service Atlassian have set up for the Community. First they hosted some Jive Forums, then they moved to an OSQA based system.
That was replaced with Confluence with the Questions-for-Confluence app added, but it struggled with some aspects of maintaining a rapidly growing public community, and didn't have the dedicated support or attention the current Community has, and they decided to move again on to this platform (Khoros, formerly Lithium)
So, yes, there are a number of people hosting Community type stuff with Confluence, almost always with some additional app added - Questions or one of the forum providing apps.
The one piece of advice I would give you if you're going to try to run a Community - make sure you have some dedicated time for someone to do some curation, moderation and admin, making sure you keep it up to date, hardened against spam and abuse and so-on.

we (ACE Berlin/Brandenburg) are archiving all our stuff in a Cloud Confluence (and have imported an older archive from a server Confluence) that we are paying for out of our own pocket and provide anonymous access to the main space, because of the fact that we can not rely on Atlassian for the long term. We have been asking Atlassian for a larger instance for years to provide a home for (potentially) all members of our ACE and to allow for real collaboration, but so far without success.
