How do I change what database Jira is using?

This support article says: "Adjust your JIRA database connection to point to the new database." but it doesn't say how.

Just to add to Alexey --

Typically the database is configured within a file named 'dbconfig.xml'.
It's possible that the database is configured in server.xml, in uncommon situations.

It's required to shut down the application and modify one of these text files.
