I want to remove the 'development' field from a certain projects issue screen.
It's not a software development project, actually its a Digital Print Centre service desk!
So all the development stuff isn't needed.
How do I do that?

From the project's permission screen you can remove the permission for access to development panel and then it should no longer be visible.

It's possible you have to delete the View Development Tools permission in your permission scheme
You need to have something like that

I'm adding this answer because this is the top result on Google for hiding the development panel.
For anyone who wants to hide the development panel without touching permissions, you can! You may need to be an admin to do this.
The reason you may want the "View Development Tools" permission is that you may have different apps (such as Git integration app) that need this permission in order to be displayed but maybe you don't want the built-in development panel to show.
To hide the development panel on the issue without touching the permissions, open any issue in the project and underneath the fields on the right, you will see a "Configure" button at the bottom. After clicking the button, simply remove "Development" from the fields and it will no longer show.
This can be done while keeping the "View Development Tools" permission enabled.
