How do you edit the list of fields (highlighted) included in the 'Details' portion of an Epic ticket after the ticket has already been created?
Depends on what you mean by Edit?
If your talking positioning -
Space Settings → Work Items → Layout
Be advised - fields available are what's on the screen/field scheme in the space.
If your talking about "changing" the field values -
You will need the "Edit Issue" permission to change them - that will depend on your Space Settings current Permission Scheme And/or your space role assignment. (IE: Read Read/Write/etc)
This gives some insight to that - but its a broad subject:

If the fields are locked - its either because missing from the "Edit Screen" (Again Space Settings → Work Items → Screens) - or a Configuration in the Workflow pertaining to a very little known configuration change.
jira.issue.editable
But I'd advise not using this - as it can get a little too restrictive.

Keep in mind a lot of these require "Jira-Admin" level access if your not in Team-Managed - and Team-Managed is a little awkward/different in comparison to Company Managed.
Hi @Roy , Farah, adding to Matthew's answer, there are two levels depending on whether you want to change it for everyone or just for yourself:
For everyone (needs space admin):
On an existing epic there's usually also a Configure shortcut (gear or ••• near the Details panel) that jumps you straight to that layout.
Just for yourself: hover over any field label in Details and click the pin icon. Pinned fields move to a "Pinned fields" section at the top for you only, on every work item. It's handy when the admin layout is fine but you always look for the same three fields.
Thank you both!
