Has anyone figured out why Jira sometimes shows an issue as “updated” even when no visible field was changed? I’ve noticed it on a few issues and can’t tell what’s triggering the update timestamp.

When you go to the History option of your work item do you see the changes?
If you are the organization admin, you can see in the Audit log (you will find it in Insights) if something was happening in the last 7 days.
Have you tried checking the issue history? Is it empty there as well, without showing what could be causing the update?

If you navigate to History tab at the bottom of the work item, can you find any additional info?
I do know that a couple of background processes (e.g. comment edits, automation and API activity and some background recalculations) can cause "silent" updates.
