Only showing one file at a time during pull request. This is very annoying and making it difficult to review work during PR. Why was this done and how do I restore the previous functionality?

There has not been any recent changes to the pull request UI. There is a setting that you can configure to load files all at once. Can you check if that setting may have been changed?
Open a pull request > Click on the Files change tab > Click on the gear icon on the far right > Select All at once under the Load files section
