From the above provided Im still not finding the place to change the name that appears on emails from jira, this can be confused with the subject line.

Hello @Nicholas Diogo ~ I believe you can do that by navigating to your service project settings, then go to Notifications > Customer notifications and select "Edit" next to the email address.  Note that you must be a project admin to make this change.  Also, have a look here for additional details:  Configure Jira Cloud to send emails on behalf of your domain | Atlassian Support
