EL audit logs contiene informacion de CIERTOS cambios. No todos.

Segun la lista, esos cambios en los tableros no son auditados.
Puedes controlar quién puede compartir filtros, tableros y paneles globalmente a través de la configuración del sistema> permisos globales.

Pero no hay permisos para los tableros.

I notice that the tags on your post indicate that you are using the Free subscription? Is that correct?
If it is then note that the Audit Logs that @Aaron Pavez _ServiceRocket_ mentioned are not available to you. You must be on a paid subscription to have access to that feature.
Additionally with the Free subscription all users that are licensed to access your Jira product are granted the equivalent of Project Administrator/Board Administrator access for all your projects and boards. This is a limitation of the Free plan - it is not possible to limit/customize the permissions of the users beyond separating Jira Product Administrations from other users. This is documented here:
