Is there a way to display a copyright and confidentiality notice for content generated in Trello?

If you're intending to show a notice for users who will access your board for the first time, especially if it's a public board, then I would suggest adding the copyright in the board description here:
https://support.atlassian.com/trello/docs/the-board-menu/#About-this-Board
Once you add your copyright notice, it will show as a pop-up when this board gets accessed.
