Change custom field value post function?

Question

I have a multiple value custom field that I would like to change post function when a task is moved to a specific status/column. I tried the format option but that literally replaced one of the field values in the actual custom field instead of just that task.

We don't have access to these add-ons. Any regex tricks that can do this?
