assigning roles to users

I am finding it difficult to give a role to a user such that they can only see bugs/issues which I assign to them

Hi @ejoobi and welcome,

you can define a specific permission ("Browse project") to assignee. In that way, a ticket can be viewed just by the user that is assignee.
