I want to create a issue of type 'bug' within a story, only option I see under more is 'create sub-task'. I want to find out how many bugs (and not sub-tasks) are created per story.

The issue hierarchy for Jira is
Epic|-- base level issue types (story, task, bug, etc.) |-- subtask level issue types
A Jira Administrator can create additional issues at the base level and subtask level and give them custom names.
If you want to be able to create a "bug" that is a child of an issue type that is at the base level (i.e. under a Story) then your Jira Administrator needs to create a new issue type at the subtask level and give it a name, like "bug subtask".
That new issue type will also have to be added to the Issue Type Scheme for the projects where the new type needs to be available.
And there may also be a need to update Field Configuration Schemes, Issue Type Screen Schemes, and Workflow Schemes, depending on if the new bug subtask needs different fields, screens, or workflow than other issue.
Alternately you can use the built in Bug issue type that exists at the base level and use issue linking to link it to the Story. This will not be seen by Jira as a parent/child relationship between the two issues.
