Is it impossible?
Remove the field from the "edit" screen and put it on a "transition" screen, then create transitions back to the same status to allow the edit, and protect them with "conditions" that say "only that user"
Or use the Behaviours function in the Script runner (easier, cleaner, but can be bypassed by the user)
What detail are you looking for? You need to edit your workflow and screens, or use an add-on.
