Can't seem to located how I can add end date to epics / tasks, etc in a team managed project

You can go to project settings --> Issue types and select issue type which you want.
On right hand side , under create a field you can select type of custom field.

but that creates a custom field. I want to add the Jira End Date field....
Are you referring Due date ? If yes, you can check under PREVIOUSLY-CREATED FIELDS section. below CREATE A FIELD section.
