I want the screens to be different for our Epic task type depending on which project it's in. Whats the best way to do that? Screen schemes?

you can define different epic screens at your convenience. For each project you need to create a specific screen scheme associated with create/edit and view screen.
Finally you need to create a specific Issue Type Screen Scheme with epic associated to specific Screen Scheme and then use Issue Type Screen Scheme in your project.
That's all.
