i would associate a workflow for each Jira project, but when i create a new project in jira the default workflow is associated with the new project, what is the right way to define a workflow for each Jira project Please ?

From the project configuration page you can associate any of your already created workflows schemas to the project.
The best approach would be creating as many different workflows as you need for the different issuetypes your project is going to have (maybe you have 3 issuetypes and 2 of them use the same workflow but the other type uses another one), then creating your workflow schema and then associate that schema to the project from the configuration page of the project itself.

This is an expected behaviour and depends on the type of project you create. When creating standard Business/Project Management projects, you’ll find that your project uses the default workflow.
However when you create Jira Software/Service Desk(now Service Management) projects, they each have a standard non shared workflow created specifically for them.
If you have a workflow in mind that you want to use and it’s is already used by another project and you are sure your project shares other configurations with this project, then when creating the new project, select create with shared configuration option in the initial project creation pop up.

But for example if i use an existing workflow for my project, how can i rename this workflow only in my project ? i would do this to avoid having N project sharing the same workflow ?

You must create as many workflows and workflow schemas as you need and then you must associate those to each project as you see fit.
If two projects share the same workflow schema will be just because you've configured the same schema for both of them...
I would try to use the same schema in as many projects as possible so any change in a workflow will propagate to every affected project. But of course only if it makes sense.
so it is not possible to rename a workflow in my project ?
