I want to create a new process - where to start?

Hello Guys,

im new with Jira ITSM and i wanted to create an new Project and customize the fields.

I just created a new Projekt for "Leihanfragen" for the next step there should be a choice for three kind of devices, Standard, IT and Multimedia.

How can I edit and customize it?
