The Task issue type does not appear in the drop-down for a particular project- even the the issue scheme shows all issue types in drop-down for other projects using the same scheme.
Any idea why this is happening?

Go to project settings > issue types and ensure it is listed if not add it.
Is this an existing issue that you are editing, or a new issue you are creating? If it's an existing issue, it is likely that the Workflow Scheme you are currently using does not use the Task issue type. In these situations, you need to click the More button and select Move. Leave the project name as is, but set the Issue type to Task. The Move screen shows you every available issue type is the Issue Type Scheme regardless of workflows.
