How do I make Jira calculators velocity on a different state than 'Done'?

Question

Environment: Jira Cloud, classic Scrum process with Kanban boards, custom flow.

Being a small(er) company, we combine User Story prep, grooming, dev, QA, Acceptance and deployment in one flow. However, as far as I have been able to determine/deduce calculations for velocity use the state 'Done' to include or exclude stories from the calculations (please confirm, I have no definitive proof of this!).

For us the calculations should take place on a different state ('Deploy to prod', in the future maybe even 'Deploy to acc'), this is when development is done but we keep the stories on the board for tracking purposes as deployment (especially to prod) takes place outside of the sprint.

How can I set the applicable state for velocity calculations, or is there another way of managing the full process within the existing limits of Jira?

Boards use the last, rightmost column to indicate "done".  You can put many status in a board column, and that's all the velocity calculation looks at.

'Deploy to x' is in the statusCategory 'Done'. I suspect the story points are not counted towards the relevant sprint due to the stories being moved to the next sprint as part of closing the sprint.
