Is there a way to show the time remaining instead of the original estimate at the top of sprint backlog?
no. while you can include on the individual cards you cannot change the summary behavior.

Can this be modified by changing anything on the server side?
You would need to hack some of the core code in Software - a sprint really should be showing your estimates, not remaining.
