I've been integrated our Jira account with MS teams and when I opened one of our boards I can see the issues there but the fields are very basic fields (only summery, status, description and assignee)
do we have any option to add more fields to display in the MS teams screen?

You can try reaching out to ZigiWave, as I can remember they were having similar integration between ServiceNow and MS Teams. Check their website and drop an email to see if they have the same for Jira / MS Teams. Their website is https://zigiwave.com/jira-software/.

Thank you very much for using our integration! Please be informed that currently, MS Teams Integration for Jira Cloud contains an only standard set of fields such as Project, Issue Type, Summary, Description, Priority, Assignee. In case you are using Jira Server Integration, the Cards sent by the Connector display pre-defined fields that cannot be customized: priority, issue type, status, assigned to, reporter. Once a comment is added to Jira issue in the very JIRA, the Card sent in MS Teams Channel will display an additional Comment field.
Our team is currently working on the improvement of our integration and we appreciate any suggestions and feedback.
