I'm able to disable the Bugfix, Feature, Hotfix and Release Branch prefixes in Branching model but not the Other Type when creates a branch. This way, if I disable Bugfix for example, developer still can create branches with prefix bugfix using the Other: bugfix/<branch name>

The branching model feature is just a way to tell Bitbucket what naming convention you would like each kind of branch to use.
However, that feature will not prevent a user from creating a branch with a different name or using a prefix that you have disabled in the branching model. Users can still provide custom branch names using the Other option.
We had the feature request BCLOUD-21714 in the past to disable the type "other", but this feature didn't get enough interest. However, you can still vote for that feature and add a comment there with your use case, as our Product managers constantly evaluate the feature requests including the closed ones.
