In my user list I have a system the system appears to have generated called 'sysadmin' which is going against my licence numbers, how do I remove it?

Can you also confirm, with the on-demand product, you only provide support for 90 days? What happens if I have issues after that?

You can have more users than your license, but only those in the jira-users group can log in and count towards your licence number.

So if you remove this sysadmin from this group you should be fine.
