The instructions we received from Atlassian only show how to do this on the data centre instance and is not applicable to us

In Cloud, all your products will be listed in the Atlassian Administration Console.
If you want to renew a product go to the Billing section.

Thanks for the quick response. Would you by chance have any direct documentation on how to change a product key? The info we got from Atlassian support doesn't seem to match what we are seeing
