Wondering if you can create a process with external email choices to be automated

I am working on creating a workflow for multiple projects regarding implementation of product for hundreds of clients.  There would be multiple steps with multiple steps which initially includes reaching out to external partners as the first step and there are 3 choices of the emails to be delivered which are based on different criteria in the setup of each product chosen.  The responses also should be saved and recorded.

Is this possible to be choices generated and recorded as a step in the workflow?

I would suggest looking at JEMH to create the custom emails. You can also track the responses by using an email template form to update the issues based on the response.JEMH will also record the email chain within the JIRA issue.
