Currently in the process of downloading the following: 

Once I have finished installation, my question is if users from another company will be able to access the information that I will be working off on from Jira? Not sure if they have the cloud or server version. Does it even make a difference? I am not a techie, so I don't really understand the process.

Welcome to Atlassian Community.

It all depends on how you set up access to your servers if external users will have access to them or not. You would have to set up your firewall to allow it.

If you want to be able to sync your issues in Jira to an external company you would need an app for that, like Backbone or Elements Copy & Sync. There are other apps on the Marketplace too that can do this.
