We utilise Epics for major projects/upgrades which may take multiple releases to complete. How would I link multiple releases to a single Epic.

The FixVersion custom field is where you manage your releases. You can add multiple versions there out of the box.
Moreover, it is mainly your stories inside your Epics that your release. So primarily you would assign releases to stories rather than epics. But there is nothing wrong with assigning the fix versions of those stories to your epics as well.
