is it possible to assign a single task to more than one assignee? So that one person is able to create a task and assign it to him/herself and other colleagues in the Kanban Board?

JIRA is designed in such a way that issues must be assigned to a single individual to prevent tasks from being overlooked.
Ideally, you should not be assigning a task to multiple individuals since this may impose many issues (like lack of clear responsibility defined among the assignee).
