Exclude custom field values from drop down

Question

Using 'jira.field.resolution.exclude' in the properties of a transition and then giving the value id of the value that you want to exclude, you can limit the items that show up in the resolution field.

Can you do the same thing with a custom field? 
What would be the syntax to do the same thing with a custom field?

Short answer is no, not with workflow properties. You need an app to do it. ScriptRunner can be used to restrict/exclude values in custom fields.
