How can I have the due date of an issue automatically change to the end date of the sprint when I move the issue from the backlog to the sprint or move the issue from one sprint to another sprint?

You should be able to do that using Automation on Jira Cloud using various Sprint related events but I just noticed that you are on server then you can either try Automation or ScriptRunner for Jira where you can create a script listener.
