In Jira Service Desk Server portal, when I create a ticket, I have a Multi select field, which has some quite lengthy options. These are not displayed when selecting, so it is hard to make the right choice, as I cannot see the whole value. Is that a bug or am I doing something wrong here?

The behavior you're facing is indeed a bug in Jira Service desk Application. We've reported this problem with our PMs in the link below:
Feel free to vote and watch the bug to increase its priority and also receive notifications about any possible workarounds or fix implementation.
For now, we can only suggest using shorter descriptions for the custom field options or use a message custom field (Provided by the free app Toolkit Plugin for Jira) to properly display each option description.
