We'd like to set up our email channel on Jira Help Desk however, it appears the only available protocols for this are versions of IMAP and POP--we're on a corporate network and these protocols aren't available--is there any way to use SMTP?

IMAP and POP are incoming, and SMTP is strictly outgoing mail. Can you let us know what you want this email channel to do exactly?
Regarding the protocols that are available, what kind of mail server are you using? Is it on Exchange?

Yes exchange, our security team won't allow IMAP or POP internally on the corp network

Thank you for confirming.
They will need to allow IMAP or POP to use with the your mail server, since we do not currently support Exchange outside of IMAP or POP3. Have a look at the following feature requests:
