can i add the custom fields in "All Project Types - All Categories" view

Hi team,

I want to have add custom field say "Project Status" in which we will give values say {"In Progress", "Completed"} and this custom field will be in some Issue Type screen while creating or editing issue..So i want this "Project Status" to appear in the "All Project Types - All Categories" view.

So in the below screenshot i want to have my custom field to appear  with its status like other categories.

No.  A project type is provided by the application that defines the type.  Projects have a fixed set of characteristics and there's no functionality to add your own characteristics.

You might want to have a look at the "pro fields" add-on though.
