Can I have different Resolution Screen in distinct projects?

I want to organize the options in the field's resolution for each project, like this:

  • PROJECT 1 - Resolutions: Fixed, Complete, Done.
  • PROJECT 2 - Resolutions: Won't Fix, Duplicate, Done. 
  • PROJECT 3 - Resolutions: X, Y....Z.

Show some options and hide others, is it possible?

That's a LOT more complex. The list of resolutions is a global list Two options 1) Use the Behaviours part of the Script-Runner options to remove them 2) Do the work in workflows. You can use workflow properties to restrict the resolutions available from the global list - see https://confluence.atlassian.com/jira/workflow-properties-189949.html

Using field configurations and individual screens per project would allow you to do this.
