Accidentally removed projects associated with a priority scheme

Hello, I'm a new Jira admin. I recently created a new project and was associating it with a default priority scheme when it then un-selected the previously assigned projects and only saved the one. I have no recollection of the 40+ projects that were assigned, is there a way to retrieve a list of sort? 

 

We checked our logs and there's nothing in the logs. It just says "project reindexed" after the change I made.
