How can we get a new ID or reset the server ID for the live environment which is now running on a cloned DB server (the original DB server failed).

A better option would be to stop the source server and get a clean backup of that while it is not running.   You don't  need a new server id, you want to work from a safe copy.

There is a flag in the database that you could flip, but doing that would not leave you with a clean, safe or even useful database.
