Where is it stated on Confluence that confluence-admin cannot edit the audit logs? Trying to resolve some questions for the auditors.

unless I am missing a point the idea of an audit log is that it is not manipulated. Also auditors probably know that with database access nearly everything is to be manipulated but from an UI perspective offering an edit option would be some kind of - unusual.
If you were looking for the expiry of the logs - yes, this can be adjusted for several audit logs.

Audit logs are stored in the DB so if you have DB access technically you could manipulate them. https://confluence.atlassian.com/doc/auditing-in-confluence-829076528.html
