Is there a way to add an 'end date' for users for easier user management? Some of our users temporary and with a very large list it's hard to keep track of who should have access until when. We don't want to leave it open over the long term and don't want to do continuous user management one-by-one. Is there a script or workaround for this?

It's not possible in Confluence to grant temporary access automatically to a user. You will need to provide them can-use access in Confluence and then remove it when they no longer require it.
If you have a set of users that need to be guests and deactivated at once on a certain date, you could create a separate group for them, provide that group access, and then when their contract is over, manually remove access.
