Currently no clustering is setup in Confluence 6.15.6 Server. We now want to upgrade License to Confluence Datacenter but don't want to setup clustering.
-Is it possible to do that and how?
-If yes than can we still setup Clustering in future?

since Confluence 7.2, to migrate to Data Center you only need to change your license (System Configuration -> License Details). I think this is the easiest way since you would only need to update Confluence.
Otherwise, with the 6.15 version, you'll have to follow this guide to setup a load balancer and shared file system : https://confluence.atlassian.com/doc/migrate-from-server-to-data-center-203651.html
