I'm searching a way to get/display all predefined variables in order to use them while creating a template.
Is there also a way to update variables (ex: $jiraIssues)?

Also Looking for a Full list of predefined variables (with description) like:
$currentDaeLozenge, $pie_chart_summary
$documentOwner, $totalIssues, etc,..

Besides the variables you can add for your template, there is a feature request for Global Variables:
Please comment on that issue with your usage case, and vote on it in order to show your interest in such a feature.

That's correct.
What kind of Jira issues are you attempting to include in your template?
Would the Jira Issues macro not be useful here?

The Snapshot Jira Report Template is part of the Jira Report Blueprint.
You can modify templates which belong to a blueprint using this method:

You're able to modify the following in the template, according to the article:
You can also choose to edit the page template to modify the format of the page, change some headings, or modify the instructional text. To See Instructional text to find out more about using instructional text in templates.
Therefore, It's not possible to modify the display for the changelog.
