I’m working for a company who has one dozen applications.
My job will be working with Atlassian Confluence in only one of this app.
It is possible to be an Administrator in only one application without affects the others?

Yes - each Atlassian application supports ways to limit admin users. Generally, you have a "group" for admins (or many groups) and you put users into those groups and then tell the application "admins are the people in those groups".
You'll find most places have groups like jira-administrators, confluence-administrators, and so-on.
Yes, you can give admin access per application. Just manage a separate group and add it as Administrator under global permissions.
In Confluence, you can also add individuals.
